With over 25 years’ experience in the culinary arts, Chef AJ Servidio has learned the value of professionalism and has developed his own philosophy regarding the food he creates. “Culinary Old School” is how Chef AJ likes to describe his approach in the kitchen. Using only fresh ingredients, local products and creating meals from scratch allows him to bring variety and healthy choices to his menus.
Chef AJ started out delivering pizzas as a teenager only to realize he had a passion for food and the restaurant business. After graduating from the Culinary Institute of America in Hyde Park, NY in 1994, Chef AJ began his career as line cook at Peppercorn’s in Park Ridge, where he met his wife, Jen. He progressed from Head Chef at Jeanine’s Valley Inn in Valley Cottage to Executive Chef at Rockland Country Club in Sparkill to Executive Chef at Hudson 303 Sport Café in Tappan. Throughout his career, Chef AJ has maintained a loyalty to his purveyors and valued the skills of his employees.
After 7 successful years as Chef/owner of AJ’s Catering and Take out AJ has partnered with Doug Faehndrich to open AJ’s Kitchen in Pearl River. At the new location AJ continues to use his “Culinary Old School” philosophy and will be Serving New York State Beer & Wine and have full table service with a Bar.
